Ingredients
- 4 lbs crab apples
- sugar
- 3 pints water
- lavender sprigs
Method
- Chop apples, keeping cores
- Boil for 1 hour with 2 sprigs of lavender
- Strain overnight using a jelly bag or a muslin lined sieve
- Add 1 lb of sugar for each pint of liquid
- Boil rapidly until setting point is reached (about 10 minutes)
- Pour into sterilised jars
- Pour boiling water over more lavender sprigs
- Add 1 sprig to each jar
