Lavender Jelly

Ingredients

  • 4 lbs crab apples
  • sugar
  • 3 pints water
  • lavender sprigs

Method

  1. Chop apples, keeping cores
  2. Boil for 1 hour with 2 sprigs of lavender
  3. Strain overnight using a jelly bag or a muslin lined sieve
  4. Add 1 lb of sugar for each pint of liquid
  5. Boil rapidly until setting point is reached (about 10 minutes)
  6. Pour into sterilised jars
  7. Pour boiling water over more lavender sprigs
  8. Add 1 sprig to each jar
