Fruity Spiced Chutney
Ingredients
- 1 1/2 pints cider vinegar
- 16 oz plums
- 16 oz pears
- 16 oz onions
- 16 oz tomatoes
- 16 oz sugar
- 8 oz celery
- 4 oz raisins
- 2 cooking apples
- Splash of sunflower or rapeseed oil
- 1 tablespoon chopped ginger
- 2 tbsp pickling spice
Method
- Chop all fruit and vegetables (remove plum stones)
- Soften onions in oil without browning
- Add chopped ingredients and half the vinegar
- Tie pickling spice into a piece of clean muslin and add to pan
- Simmer for 2 hours
- Add remaining vinegar and sugar
- Boil until thick and syrupy
- Store in sterilised jars
- Leave 3 months to mature
