Fruity Spiced Chutney

Ingredients

  • 1 1/2 pints cider vinegar
  • 16 oz plums
  • 16 oz pears
  • 16 oz onions
  • 16 oz tomatoes
  • 16 oz sugar
  • 8 oz celery
  • 4 oz raisins
  • 2 cooking apples
  • Splash of sunflower or rapeseed oil
  • 1 tablespoon chopped ginger
  • 2 tbsp pickling spice

Method

  1. Chop all fruit and vegetables (remove plum stones)
  2. Soften onions in oil without browning
  3. Add chopped ingredients and half the vinegar
  4. Tie pickling spice into a piece of clean muslin and add to pan
  5. Simmer for 2 hours
  6. Add remaining vinegar and sugar
  7. Boil until thick and syrupy
  8. Store in sterilised jars
  9. Leave 3 months to mature
