Custard

Ingredients

  • 1 pint milk
  • 2fl oz single cream
  • 4 egg yolks
  • 1oz caster sugar
  • 2 level teaspoons cornflour
  • 1 vanilla pod or 1/2 teaspoon vanilla extract

Method

  1. Slowly heat the milk, cream and vanilla pod / extract
  2. Remove the vanilla pod
  3. Whisk the egg yolks, cornflour and sugar and cornflour together
  4. Add the milk and cream mixture onto the eggs and sugar, whisking all the time
  5. Return to the pan, gently stir over a low heat until thickened

Tips

  • Wash the vanilla pod, then dry it and store in a jar with caster sugar to make vanilla sugar
  • To keep the custard warm, stand the jug in a pan of hot water and cover the top with to prevent a skin forming
